The Tahiti lemon is used to make lemonade and the rest of the Creole lemon applications. In Florida, a lemon wedge is usually served with the avocado, and the lemon juice is often used as an alternative to vinegar in dressings and sauces. It was once held that the oil from the peel of the Tahiti lemon was of inferior quality. Since the late 1960s, it has been accepted by the trade and good quantities are produced as a by-product of the juicing process. It is used to enhance lemon juice and for most other purposes that Creole lemon peel oil is used for.
